Grizedale Arts Director, Adam Sutherland, is not a baker but he can make a brilliant croissant: proof that anyone can learn to make the most iconic pastry on the planet.

He guarantees that if you follow this workshop you'll make the best croissant you've ever had (or your money back).

About this Workshop
A continental breakfast staple, the croissant is a labor of love, but, in just one day, Adam will teach you how to master the technique for making this extra special weekend breakfast bake. 

As an added bonus, you'll also pick up tips on how to make the croissant's closely-related baked relatives - the cardamom bun and the cronut.

10.00am - Making the dough

11.00am - Cooling the dough

4.00pm - Adding the butter

4.30pm - Folding the dough

5.00pm - Folding the dough

6.00pm - Making the croissant and rising before baking

7.00pm - Baking

Ingredients and Equipment 
  • An oven that heats to 220c
  • A bowl for mixing and 2 other small bowls
  • A rolling pin
  • Cling film or a plastic food bag
  • A pastry brush
  • A baking tray

  • 250g Bread flour (or all purpose)
  • 1 tsp Yeast (any kind) and / or sour dough starter
  • 1 tsp Salt
  • 25g Sugar
  • 200g Butter
  • 2 Eggs
  • (For other baking, milk, cinnamon, cardmonum, vanilla essence)
